Tomatoes dried slowly in the sun concentrate into something sweet and intense. We blend them with toasted almonds, garlic, basil and a squeeze of lemon.
It is thick enough to spread and loose enough to toss straight through hot pasta.
How to use it
Stir a spoonful into pasta water, swipe it inside a sandwich or serve it with the rosemary crackers.
